Healthy French Toast


This version of French Toast won't sabotage your fitness goals. A hint of cinnamon, 
warm berries and sliced bananas easily give syrup a run for it's money!


Ingredients:

- 1/2 banana
- 1/2 cup frozen or fresh berries 
  (I used frozen blueberries, blackberries and raspberries)
- 1 slice of Ezekiel Bread
- 1 egg white
- 1/2 tsp natural vanilla extract
- cinnamon
- stevia
- olive oil

Directions:

- in a small dish, sprinkle berries with stevia. Microwave until berries are warm and juicy (approximately 45 seconds). Set aside.
- on medium heat, warm a small amount of olive oil in a pan
- in a flat dish or bowl, quickly whisk the egg whites and vanilla together
- place bread into the egg whites, completely covering the bread. Do not allow the bread to rest in the         egg whites and become soggy
- immediately place the bread into the hot pan

- sprinkle the uncooked side of the bread, which is facing up, with stevia and cinnamon
- cook the bottom of the bread until golden brown
- flip the bread over to cook the top.
- once the top is also golden brown, remove from the pan and place on a plate. Cinnamon side up!
- pour the already warm berries on top of the bread. I like when the juices soak into the bread.
- slice the banana on top of the berries
- Voila! Healthy French Toast!
