Craving muffins but wanting a healthier option? These Banana Walnut Protein Muffins
are a great alternative to traditional muffins. Delicious when warm from the oven,
but also great to grab on the go!
- 1 cup of mashed ripe bananas
- 1 tbsp vanilla
- 5 egg whites
- 1 cup oat flour
- 2 scoops of plain or vanilla protein powder
- 1/4 tsp baking powder
- 1 1/2 tsp cinnamon
- 4 1/2 tbsp Stevia or Splenda
- 1/2 cup crushed walnuts (unsalted)
Directions:
- pre-heat oven to 350〬C.
- in a small dish mix together 1/2 tsp cinnamon, 2 tbsp Stevia and the crushed walnuts. This will top the muffin so set aside once mixed.
- in a bowl mix together the following dry ingredients and set aside:
- 1 cup oat flour (I normally make my own by putting uncooked oats in the food processor - make flour as fine and smooth as possible)
- 2 scoops protein powder
- 1/4 tsp baking powder
- 1 tsp cinnamon
- 2 1/2 tbsp Stevia
- in another bowl mix together the wet ingredients (bananas, egg whites, vanilla).
- combine the wet mixture with the dry mixture in increments. Stir until evenly combined.
- prepare a muffin tin by spraying with Pam or Olive Oil (I would recommend this over the muffin papers shown in the photo).
- fill each muffin cup with batter until 3/4 full.
- sprinkle the top of the batter in each cup with the walnut topping that was set aside.
- bake for approximately 20 minutes (place a toothpick down the center of several muffins - when the toothpick comes out without batter on it, the muffin is cooked).
- using a dinner knife, loosen around the edges of each muffin.
- remove from the tin and cool muffins on a wire cooling rack.
- best when enjoyed warm!
