Food Friday!


Chewy Pumpkin Seed Bites


LOVE this stuff! Why? Because I love to snack ;)
The first week of our pumpkin Food Friday theme are these
Chewy Pumpkin Seed Bites. Healthy, tasty and perfect to pack in lunches
or to snack on during a movie.

Ingredients:

- 1 1/2 cup hulled toasted pumpkin seeds (unsalted)
- 1/2 cup toasted sesame seeds
- 1 tbsp coconut oil
- 1/4 cup agave or honey
- pinch of sea salt

Ideally, I would have only used agave in this recipe but ended up using honey because I ran out of agave.
As well, I'd like to try this recipe with less of either sweetener, to reduce the amount of sugar. 
Directions:

- grease an 8" x 8" glass pan coconut oil. Also grease a spatula. Set aside.
- in a medium sized bowl, combine the pumpkin and sesame seeds. Set aside.
- measure out the agave and honey into one measuring cup. Set aside.
- using a small pot on medium heat, warm the coconut oil until it becomes liquid and is very hot. Try not to scorch the oil.
- once the oil is hot, quickly pour in the agave or honey. It will bubble up vigorously.
- I did not stir the hot mixture and allowed it to bubble until the colour lightened (approximately 3 minutes).
- when the hot mixture is ready, immediately and quickly pour it into the bowl containing the seeds.
- using the greased spatula, quickly stir until the seeds are evenly covered with the hot mixture.
- again moving quickly, pour the entire mixture into the prepared 8" x 8" pan. Evenly press into place.


- chill in the refrigerator for approximately 2 hours or until firm and set.
- now get your muscles out! Once the mixture has chilled, cut it into small cubes.
- using a spoon dig out each cube, aka bite ;)
- keep in the fridge for firm bites, or allow to warm to room temperature for chewy bites.

- makes 56 bites!
