The holidays are over and the New Year has arrived. For most of us, this means starting new nutrition plans, pursuing fitness goals and taking the steps to become healthier and happier. The cold winter weather (- 30〫) had me craving something warm and hearty, while still being healthy. A twist
on a classic nutritious breakfast food, this Banana Blueberry Baked Oatmeal
will surely keep us warm during the cold winter, and also help us reach our health and fitness goals.
Ingredients:
- 1 medium banana
- 1 1/2 cup blueberries
- 2 cups oats
- 2 tbsp chia seeds (learn more about this tiny superfood!)
- 1 tsp baking powder
- 1 1/2 tsp cinnamon
- 1/2 tsp sea salt
- 1 can (~ 400ml) coconut milk
- 2 tbsp agave syrup or honey
- 1 tbsp vanilla
- coconut oil
Directions:
- preheat oven to 375〫
- grease an 8"x8" dish with coconut oil
- slice the banana and cover the bottom of the dish with the slices. Cover the bananas with 1 cup of blueberries. Set aside.
- in a bowl, combine the dry ingredients (oats, chia seeds, baking powder, cinnamon, sea salt).
- add the honey and vanilla to the oatmeal mixture, stir well
- top the fruit already prepared in the dish with the oatmeal mixture
- pour the coconut milk over the layered ingredients
- sprinkle the top with the remaining blueberries
- bake for approximately 40 minutes or until the oatmeal is cooked and at the desired consistency
- let cool and serve while still warm!
