This is another one of those recipes inspired by a local restaurant,
just like the Coconut Curry Chicken recipe. I couldn't stop thinking about
a hearty soup I enjoyed months ago at a new restaurant in town. This
rendition of homemade Tomato Basil Soup is healthy, easy to make and delicious.
It definitely hit the spot and has a great little kick of spice!

rendition of homemade Tomato Basil Soup is healthy, easy to make and delicious.

Ingredients:
- 500 ml stewed organic tomatoes (low sodium)
- 500 ml of reduced sodium chicken or vegetable broth
- 500 ml of reduced sodium chicken or vegetable broth
- 1/2 onion
- 2 cloves of garlic
- approximately half a 1/8 tsp Stevia
- 1/2 tsp crushed red pepper flakes (adjust to preference)
- 1 tbsp dried basil
- 1 tsp oregano
- sea salt (desired amount)
- pepper (desired amount)
- olive oil
Directions:
- finely chop the onions and garlic
- with a small amount of olive oil, saute the onions and garlic until tender but not drowned
- add the stewed tomatoes and broth to the saute pan, bring to a boil
- add the remaining ingredients (Stevia, pepper flakes, basil, oregano, sea salt, pepper)
- reduce heat and simmer for 50-60 minutes
- makes approximately four 1 cup servings and will store well in the freezer
