Ingredients:
Directions:
- preheat oven to 350〫
- prepare a baking sheet by lining with parchment paper.
- using a food processor, process the almonds and cashews until fine and slightly oily. This will take some time so continue to scrap down the sides and reprocess on high, eventually the nut powder will begin to stick together slightly.
- in a small bowl whisk together the egg, honey, vanilla and sea salt.
- add the wet mixture to the nut mixture and process to combine into a dough.
- using a spoon, fold in the chocolate chips.
- spoon small amounts of dough onto the baking sheet, forming lightly with your hands. The dough won’t spread much once cooked so the cookies can be placed close together.
- bake for approximately 15 minutes or until the edges begin to brown.
- cool the cookies on a wire cooling rack before eating.
- great fresh from the oven, at room temp, or warmed in the microwave.
- enjoy!
