Juicy on the inside and crispy on the outside, these Zucchini Fries are addictive!
This Food Friday recipe allows for a slight indulgence while still being healthier
than it's pub version. Makes a great appetizer or side dish to mix up your
vegetable serving with dinner.
Pairs great with Greek yogurt as a dip!

Ingredients:
- 2 medium zucchini
- 1/3 cup parmesan cheese
- 1/3 cup panko crumbs
- 1 large egg
- preheat oven to 400º
- prepare a cookie sheet by covering in a piece of parchment paper

- in a bowl, whisk the egg
- in a bowl, evenly combine the parmesan and panko crumbs
- slice the zucchini into 1/4's lengthwise and then shorten by cutting in half
- dip zucchini slices into the egg and then roll in the parmesan/panko mixture
- lay each slice onto the cookie sheet

- bake for 20-25 minutes or until golden brown
- serve warm but slightly cooled
