Spring has finally arrived and with it comes a fresh Food Friday rhubarb recipe!
This Stewed Rhubarb is deliciously tart,
great on it's own or as a topper to a bowl of greek yogurt.
Ingredients:
- 5 cups of chopped rhubarb
- 1 cup baking stevia
- 1 lemon
- splash of water
Directions:
- juice the lemon and measure out the stevia
- in a large pot, place the chopped rhubarb, stevia and lemon juice
- add a splash of water
- stir to evenly combine
- bring the ingredients to a boil, stirring continuously
- after reaching a boil reduce the heat to a simmer
- simmer for 20 minutes or until rhubarb becomes tender and soft, stirring every 5 minutes
- remove from heat and pour into a glass bowl
- delicious when served while still hot but also great straight from the fridge!
