Creamy Cucumber Salad



Summer has ended and cucumber season is in full swing!
Looking for a healthy recipe to try? This Food Friday recipe is crisp and refreshing,
making a perfect side to any meal. 


Ingredients:

- 1 cucumber
- 1 cup water
- 3 tbsp white vinegar
- 1 1/2 packet of stevia
- 1 cup of plain Greek yogurt

Directions:

- slice cucumbers, peeling before hand if desired
- in a bowl combine water, vinegar and stevia
- add the sliced cucumbers, allowing to soak for at least 1 hour


- strain off the soak water, keeping approximately 2 tbsp in the bowl
- add the Greek yogurt, tossing to evenly coat the cucumbers
- serve as a side to any main course meal
